CEO, SIMON MEADMORE
Everything evolves and we are no different. Nothing stands still at The Pancake Parlour, but the one thing that never changes is our unyielding devotion to the pancakes on which we have made our name over the past four decades.
The son of the original co-founders, CEO Simon Meadmore has taken The Pancake Parlour into the 21st century. While bringing the number of Melbourne restaurants to 11, Simon commissioned a dramatic design rethink that began at the Melbourne Central location and reached its apogee in the new Malvern East. The new look is being progressively applied to other locations, making The Pancake Parlour unique and cutting-edge in its look and ambience.
Simon is overseeing similar initiatives with the food and drinks menus, with exciting new seasonal dishes and stylish lounges opened where delicious cocktails are being sipped.
“In recent years, we have undergone a major redesign with a new vision,” he said.“The redesign includes everything from graphic designs, to restaurant architecture and even a subtle culinary revolution by creating new dishes and reinventing old ones, much to the delight of our customers.”
Simon works with a senior management team that has long been part of The Pancake Parlour family. One of Simon’s major interests is in nurturing talent, and making sure any work relationship is equally beneficial to everyone.
More than 670 people are part of The Pancake Parlour and Simon’s concern is to ensure it is a happy and productive environment, where staff have as much fun as the customers.
